Tasty Lamb Shanks

Ingredients:

  • 4-6 trimmed lamb shanks
  • oxtail soup mix
  • 2T red wine vinegar
  • 1½ cups of water
  • ½ t ground cinnamon
  • ¼ t ground cardamom
  • ½ t saffron threads
  • 400g tin of chopped tomatoes
  • 2t brown sugar

 

Method:

Place lamb shanks in a large ovenproof dish and combine oxtail soup mix with red wine vinegar, water, ground cinnamon, ground cardamom, saffron threads, chopped tomatoes, and brown sugar. Pour over the shanks. Cover and cook for 4 hours, stirring occasionally. Serve with mashed potatoes and seasonal vegetables.
