Lamb Liver with Coriander

  • 500gm lamb liver, skinned, trimmed, cut into strips
  • 3 tbsp oil
  • 1 large onion thinly chopped
  • 2 tbsp lemon juice
  • Fresh coriander leaves
  • Lemon slices
  • Salt and pepper to taste



Heat oil in a large frying pan. Add liver and fry quickly over high heat. Remove the liver and keep it warm. Add onions and fry until brown. Add coriander and cook for 1 to 2 minutes, over low heat. Return the liver to the pan and pour over the lemon juice. Season with salt and pepper. Heat for 1 to 2 minutes. Serve garnished with coriander and lemon slices.
